In recent years there has been growing interest in Culinary Careers. Teachers in the Edmonds School District have been updating the cooking curriculum taught in the Family and Consumer Sciences Departments to align more closely with industry standards and college culinary courses.
The culinary program at MTHS consists of 3 semester classes. Students in Chef 1 start to build foundation skills including knife skills, recipe reading, use of herbs and spices, measuring, quick breads, eggs, food costing, fruits and vegetables, salads and sandwich production. Chef 2 students continue to build on the skills of Chef 1 and study pasta, chocolate, sauces, desserts, cooking meats (braise, broil, pan fry, sauté, and roasting). In Chef 3 (Hawk Chef Catering) students produce products to sell in the school community. Students who complete Chef 2 and Chef 3 will be able to earn Tech Prep credit at Edmonds Community College and Lake Washington Technical College.
The Chef 3 Hawk Chef Catering class provides an opportunity for students to plan and complete simple catering projects. So far this year we have been making and selling box lunches to staff, developing breakfast menu items for catering breakfasts to various groups, making take-home meals for staff to purchase, and baking Red Velvet Cakes for Valentine's Day. During 2nd semester we will prepare the main dish and cookies once a month for the Orion House (for homeless teens). The ELL Multicultural Banquet is March 11 and Hawk Chef students will prepare some of the food and help serve. Another spring project will be providing food to honor classified and certified staff.
Every spring the Chef 2 & Chef 3 students go on a field trip to Embassy Suites where the students have a chance to look at various career opportunities in the hospitality industry by touring behind the scenes at the hotel and talking to some of the people who work there. The second stop of the day is at Edmonds Community College to tour the campus and culinary program where they will be served a three course lunch prepared by college students who operate the restaurant on campus.
In April, we will be having the 8th Annual Iron Hawk cooking competition. For this competition, the students must have completed one of the cooking classes offered at MTHS and submit an application of a meal they will prepare. When chosen, 7 students will have l-l/2 hours to prepare their meal and serve to 5 judges who are chefs or local restaurant owners. Community members are welcome to be in the audience. The competition is from 2:15 until 3:45 on April 16th. The winner will go on to the district competition to be held at EDCC on April 29.
